Good Eats: Baked Potato Soup
Food does NOT get ANY more comforting than this bowl of Baked Potato Soup… so rich and warm and creamy:-).. the PERFECT indulgence for this snowy snowy day!!!! YUUUMMY DELICIOUS.
Baked Potato Soup

serves 6 to 8
12 slices of bacon
2/3 cup margarine (I used butter)
2/3 cup all-purpose flour
7 cups milk
4 large baked potatoes, peeled and cubed (I just boiled 8 small potatoes that I had laying around)
4 green onions, chopped
1 1/4 cups shredded Cheddar cheese
1 cup sour cream
1 teaspoon salt (I definitely used more..)
1 teaspoon ground black pepper
Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
In a stock pot or dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently , until cheese is melted.

Good Eats: Banana Bread
Good old fashioned Banana Bread… NEVER EVER disappoints!!!!!! I’m FOREVER and EVER in LOVE.

makes 1 loaf
3 or 4 ripe bananas, smashed (I used 5 bananas and 1/4 cup less sugar)
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
No need for a mixer for this recipe. Preheat the oven to 350 degrees F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
SO DAMN EASY AND SO DAMN YUMMMM!!!
